it is also a mark of gracious hospitality. In the rural interiors of Gujarat and even rajasthan, that the guest is served tea in a saucer (often a metallic one for the better-off families).

The idea is to drink tea hot - Scientifically, the broad surface area of the tea when poured in a saucer, helps the person to sip in hot tea without burning their lips.

on a socio-cultural level, the concept of sharing tea is indicative of bonding. It is a normal practice to take an overfilled cup and saucer. Pour out more tea on the saucer and offer it to the elder one. The remaining tea (in the cup) is then left for the juniors. a token of respect, I presume.
